The Mauviel M'Passion Tarte Tatin is good for so much more than tarte Tatin. You can use it on the hob as well as the oven, and it is a gorgeous piece to serve finished dishes in, straight from the kitchen. The two ears on the side of this dish make transporting or flipping dishes onto a plate, much easier. Lined with tin, this copper dish caramelises food beautifully and evenly, responding to changes in temperature in an instant. Since most copper pans are not compatible with induction hobs, we included an induction plate so every cook can experience the difference a copper pan makes. (If you don't need an induction plate, you can use it as a universal lid.)

  • Tarte mould: Hand wash; restore lustre to the *exterior* of the pan with Copperbrill copper polish; never use copper cleaner on the *interior* of the pan

  • Tin wears down naturally with use (typically every 10 years), and must be sent to a specialist for re-tinning
  • Avoid using metal utensils or scourers, as they could scratch the tin
