What is Santoprene®?
Especially suited for knife handles, Santoprene® is a high performance, thermoplastic elastomer material that provides a comfortable, velvety feel and will not break down when exposed to kitchen oils. This durable material is non-slip and provides grip control whether your hands are wet or dry.
Why does Mercer use German steel for the Genesis® range?
Mercer chose to use high carbon German stainless steel because it is one of the most durable steels in the world. Knives made from this steel tend to stay sharper for longer periods of time. German stainless steel resists rust, stains, and discolouration as well as offers superior strength and balance.
What does 'fully forged' refer to?
Inexpensive knives often have stamped blades inserted into the end of a handle. This means they have been cut from large, flattened sheets of steel and involve fewer steps in producing a knife which is light in weight. Fully forged knives are made from a heated bar of steel that is poured into a mould. A treatment of successive heating and cooling tempers the blade for resiliency and strength and enhances its density and hardness. The blade is then taper-ground from the spine to the edge. Fully forged knives are strong and heavy with a bolster for safety and balance.
Can I put my Mercer knives in the dishwasher?
It is best to wash your Mercer knives by hand. Dishwashing may cause knives to bang against dishes, which can knick the edges of the blades. In addition, heat and detergents can have a negative effect on the handle by causing it to deteriorate and discolour. It may also cause the steel to become brittle.
How should I store my Mercer knives?
Never be store knives loosely in a kitchen drawer. Blade dull quickly when consistently coming into contact with other kitchen tools. Moreover, reaching into a drawer for a knife can be very dangerous. It is best to store knives individually in a knife block, magnetic bar, knife roll or blade guards.
What are the best surfaces to cut on?
The best chopping boards will absorb impact but not odours as some plastic boards do. We recommend environmentally-friendly wood boards which will not absorb odours and are dishwasher safe. Never cut directly on counters, glass, metal or marble because the knife can slip and become a danger. These surfaces can also dull the blade or cause permanent damage to the knife.
