Jam pans have a unique shape that allows fruit to cook faster than standard pans. Add pure, unlined copper to the equation, and you have a tool that will exponentially improve the taste of homemade preserves. The reason for this is simple: Copper spreads heat quickly and evenly. Its quickness prevents fruits from overcooking before your jam reaches setting point, and its uniform heating prevents hot spots and reduces the risk of burning or scorching your jam. This also results in a smooth, consistent texture. Due to its speedy cooking time, copper also helps to preserve the natural colour of the fruits you are cooking, due to its speedy cooking time. Since copper is a reactive material, most copper pans come lined with a non-reactive material like stainless steel or tin. However, copper jam pans do not have such a lining – that's because the high sugar content of jam prevents the copper from reacting to the naturally occurring acids in fruits. Made in France, the De Buyer Copper Jam Pan is designed for big batches, and built to last a lifetime. This pan is compatible with all hobs except induction.
Note: In order to make sure the copper does not react to fruits or other acidic ingredients, sugar must be mixed with other ingredients before being cooked in a jam pan. This pan is not suitable for low-sugar or no-sugar jams.
