A whetstone is considered by many chefs (and us!) to be the best way to sharpen a knife, as it sheds the least amount of metal from a knife while respecting the shape of the blade. Made of hard ceramics, this Japanese-made stone ensures speedy results and does not wear out easily. This is especially important for Japanese knives, which have tapered V-shaped edges. This whetstone from Kai has a coarse 1000 grit for sharpening dull knives and a very fine 4000 grit on the other side for honing the edge. With this high grit, your knife may even be sharper than when it was new. It comes with a stand for stability while using. It measures 22 x 8 x 4cm and weighs 1.8kg.
