A great sauce can elevate even the humblest of meals. This technique-driven class will delve deep into the science behind various stocks, emulsions and sauces, such as: 

  • Béchamel, from how to make a roux to adding cheese
  • Velouté, a blonde roux that forms a rich base for soups
  • Hollandaise, a 'hot stable' emulsion to elevate homemade brunch or even simple roasted vegetables
  • Mayonnaise, a 'cold stable' emulsion that's tricky to make (but not after you take this class)
  • Tomato sauce, and how to use it as a base for your own creative spins
  • Chicken or vegetable stock you can make to use up any leftovers and cut back on food waste

You can raise your cooking game onto a whole new level with this practical knowledge. At the end of the class, you will sit down and enjoy the sauces you've made in the form of roasted vegetables with hollandaise sauce with roasted vegetables; vegetable lasagne with tomato sauce and béchamel; and tarragon and mushroom velouté. You will take home the mayonnaise you've made (and be inspired to swear off the store-bought stuff for life).

Cancellation Policy: You must notify our customer service team via LiveChat, email (cookschool@boroughkitchen.com) or phone (020 7043 1478) 10 full business days before your scheduled class to get a refund. You can transfer your seat to a different date or class if you notify us 5 full business days before your scheduled class. Any changes made within 5 full business days of the class cannot be accepted. Due to our small class sizes and to avoid increases in our ticket prices, there are no exceptions to this policy, including illness or any other reason. However, you are welcome to transfer your tickets to any friends or family who can go in your place. For our full T&C's, click here.

Note: Due to rising costs of operation, we are increasing the price of our 2024 classes to £125 per seat. This allows us to maintain our standards for sourcing high-quality ingredients, as well as fairly compensating our cook school team. If you have an existing £115 or £230 cook school voucher, it can be redeemed for any scheduled cook school class without extra charge – this class must be booked before 15 April 2024. Cook school gift cards valued at other amounts can be redeemed at their face value.
