This allows fruit to cook for shorter periods of time, which ensures the flavour, colour, and texture of fruit does not get cooked away. It is very rare for other materials to achieve this. The tapered sides of this 30cm pan make stirring easy, and the wide top promotes fast evaporation. When not in use, it makes a beautiful display piece. Please note that pure copper is a reactive material, which means that cooking acidic fruits like tomatoes or strawberries can cause copper to leach into food—unless there is an ample amount of sugar to prevent it from doing so. Thus, fruit and sugar should be mixed together before adding it to the pan, and it should not be used for low- or no-sugar jams. (It’s worth it, trust us! Bon Appétit magazine says so too.) Suitable for all hobs except induction.
