Microplane is a household name across the world for their exceptional blades, which grate and zest ingredients without tearing or diminishing their aromas. This zester is designed to help you get the most out of your citrus with the greatest possible ease. You only need to apply the slightest amount of pressure for the razor-sharp blades to gently but precisely extract zest. This means that your ingredients won’t get bruised, and that you’re less likely to run into the bitter pith. The long blade allows you to zest a portion of fruit in one long draw rather than going back and forth, which can cause the undesirable mincing of your zest and accidental grating of the pith. (Food scientist Shirley Corriher compares this motion to ‘playing the violin’.) The notch allows you to hang it on a rack. It is dishwasher safe, but repeated exposure to dishwasher chemicals may dull the blades and shorten the lifespan of the product.

Microplane

The first Microplane was conceived in 1990 by brothers Richard and Jeff Grace in Arkansas, USA, and was originally intended for use in woodworking. However, as the legend goes, a home cook once decided on a whim to try it out on an orange, and was astonished by the perfectly-shaped shards of zest it could produce. This ultimately led to the development of the Microplane brand as we know it today—a household name and the industry standard for graters, shavers, and zesters.
