We tested a dozen different premium non-stick pans focusing on two criteria, non-toxicity and durability, and Gastrolux passed both tests with flying colours.
Gastrolux’s patented Biotan non-stick coating is a ceramic composite and therefore PFOA and PFOS-free. All Gastrolux products are checked every two years by the Danish Technology Institute (TI) to certify that the BIOTAN coating does not transfer chemicals to the food that may endanger your health or change the quality, taste or colour of the food.
Furthermore, their process of applying the first layer of coating before the core body has cooled creates resilience of the cooking surface. Additional layers are then applied. Then, there is the ferromagnetic honeycomb induction base of the pan made of stainless steel to efficiently distribute heat. This base is suitable for all hobs including induction. It prevents warping of the pan as well as overheating.
What's more, we love that the brand is environmentally-friendly by using 100% recycled aluminium to squeeze-cast all of their pans.
The Perfect Removable Handle
We are not usually fans of removable handles, but a unique system using no screws or rivets ensures no loose handles and provides security and comfort. Detachable handles are not ovenproof and must not be used in the oven; please remove them before placing the pan in the oven. You don't need a glove or tea towel to do this, and it takes up less room in the oven this way too! Even the largest frying pan in their range (32cm) will fit inside a standard European oven.
Another benefit of the removable handles is easy storage. Different sizes of Gastrolux pans stack neatly, and you can store the handles in the base of the uppermost pan. By removing the handle, you can also soak this pan in the sink when needed. It's a small detail, but a Gastrolux pan is full of small details that make a big difference.
Gastrolux pans are oven-safe up to to 260°C.
Care and Maintenance
There are just a few things to keep in mind. To maintain the function of the unique Biotan non-stick surface, do not use metal utensils or any other sharp-edged instruments that will cause damage. (However, if the surface should receive a scratch, it will not affect the non-stick properties of your cookware.) We recommend that you use wood or heat-resistant silicone kitchen tools to help maintain the non-stick Biotan. When removing lids, please be sure to use pot holders or oven gloves.
Please be aware that these pans heat up and cool down more slowly than a traditional frying pan. For fast, high-heat searing of meat, we prefer stainless steel, cast iron, or carbon steel pans. For shallow or deep-frying, please ensure that you fry within the heat tolerance of the oil or fat you are using – failure to do so could result in burning the oil or fat which cannot be removed, will reduce the non-stick properties of the Biotan coating and invalidate the warranty. For more on non-stick pan care, including what oils burn at lower temperatures, read our guide.
After every use, it is recommended that you manually clean your pan with warm water and washing-up liquid. If you 'scorch' something onto your pan, use a non-scratch sponge to remove the material. To protect your investment and the long-term appearance and performance of your pan, we recommend that you clean your Gastrolux pan by hand and never put it in the dishwasher. Luckily, it's so easy to clean you won't feel like this requires much extra effort!
