Located in a small workshop under an archway in South London, Blenheim Forge is a jewel in Britain’s culinary landscape, beloved by chefs like Gordon Ramsey and Francis Mallmann. We collaborated on a collection of knives made with a core Japanese super blue carbon steel—known for its long-lasting durability and unparalleled sharpness—clad with rust-proof stainless steel until the edge of the blade for easier maintenance. It is notoriously difficult to forge super blue carbon steel, but Blenheim Forge has mastered it with their skill and attention to detail. Every knife has a comfortable, six-sided walnut handle that feels stable to hold and provides balance, attached with a beautiful copper ferrule. The wood is sustainably sourced from fallen trees in the M25 area by an enterprise that teaches joinery and furniture making to unemployed youth.
This 18cm santoku, which refers to three key tasks in food prep—slicing, dicing and mincing—will become the most used in your kitchen. The thin, sharp blade takes the strain off your wrist and ensures neat, precise cuts.

Blenheim Forge began as a hobby amongst friends who spent years creating and fine-tuning the process of making Japanese-style carbon steel knives, which have harder steel and sharper blades than Western-style knives. Their knives are now celebrated by chefs like Gordon Ramsey, Mark Hix and Argentinian barbecue legend Francis Mallman. Every knife is hand-made with the highest degree of detail and precision in their Peckham-based forgery, where they give back to the local community by sourcing wood from a charitable company that teaches furniture-making skills to disadvantaged youth.
