In this special cook school class taught by chef Helen Graham, former Executive Chef of Bubala, you’ll learn how to cook vegetables that are flavourful enough to be the centrepiece of a feast.

Join us for a special cook school class led by chef Helen Graham, the former executive chef of Bubala, whose fresh, playful approach secured its reputation as one of London’s finest vegetarian restaurants. She is also the author of the cookbook Centrepiece: Bold, Vibrant Recipes to Put Vegetables in the Spotlight, which has been praised by the likes of Yotam Ottolenghi, Jay Rayner, and Meera Sodha. In this class, Helen teaches us the skills and techniques behind her signature, no-frills style of elevating vegetables into flavourful main courses, using four recipes from her cookbook:

  • Wild Mushroom and Wakame Chili Crisp Crostini with Lime Ricotta
  • Courgettes, Peanut Tahini and Pickled Fennel
  • ‘Magic Rice’
  • Earl Grey, Halva and Blackberry Fool

 

This class includes a Q-and-A with Helen over dinner and a glass of wine.

Adaptations: This class is naturally vegetarian, and can be adapted for gluten-free diets. Due to the nature of the event, this class is not suitable for vegan, nut-free, or any other diets. This class is kosher-friendly and can be adapted for halal diets. Please let us know any dietary restrictions in advance.

Alcohol Policy: A glass of wine, beer, or a soft drink is included with the price of every cook school ticket. Please bring valid ID with you as we operate a 'Challenge 25' policy, where we reserve the right to check ID for any students under or around the age of 25. Any student who arrives to class intoxicated, or appears to be so during class, will be asked to leave and not qualify for a refund.

Cancellation Policy: You must contact us 10 working days before your class to be eligible for a full refund. You can transfer your seat to a different class up to 5 days before your class date. As this is a live ticketed event, we cannot make any exceptions. For our full T&C's, click here.
