The Mauviel M'Heritage M'150S saucepan is made from 1.5mm thick French copper (90%), which maximises the unparalleled heat responsiveness of copper while being light enough to manoeuvre easily. The other 10% is made of stainless steel; unlike old-fashioned copper pans which are lined with tin, stainless steel does not need to be re-tinned every few years and will last forever. The handle—also stainless steel, unlike the more traditional cast iron—stays cool enough that you don’t need a tea towel to grip it. It’s a beautiful piece to keep on a hanging rack. Suitable for all hobs except induction.
