This stunning handmade Nakiri comes to us from Blenheim Forge. Blenheim Forge makes around 30 knives a month in their Peckham workshop in South London, making each piece unique. Nakiri knives are a traditional Japanese vegetable knife. The blade is rectangular, making it a cross between a chef’s knife and a light cleaver, and is thinner than a standard chef’s knife. This makes working with a Nakiri a dream when slicing, peeling, chopping and julienning vegetables.

The Nakiri requires a chopping motion - the straight blade of the Nakiri knife allows you to cut all the way down to the chopping board without the need for pulling or pushing, making the cut more controllable as you are only going in one direction. The blade of the Nakiri is much thinner than a chef’s knife or a meat cleaver; thicker blades are liable to break the vegetable rather than slice it cleanly. The edge of the blade is angled from both sides - having both sides bevelled allows for a straight slicing motion.

Blenheim Forge create their knives using the highest quality Japanese Blue Super Carbon Steel, renowned for its strength and edge retention. They then hand clad each piece with stainless steel on all but the edge of the blade, leaving the carbon steel exposed only on the cutting edge. This gives you the robust strength and edge retention of carbon steel with minimal upkeep. Simply wipe down the very edge of your blade with oil to keep it from rusting before storage.

Hand wash only. Chopping on glass, marble or granite etc will damage the edge of your knife 

 

Carbon steel knives are a marvel to sharpen and hold a silky edge that will glide through ingredients due to their purity and minimal alloying. They are reactive metals and will patina through use so frequent wiping with a light coat of oil and dry storage is advisable to keep them rust-free

Blenheim Forge began as a hobby amongst friends who spent years creating and fine-tuning the process of making Japanese-style carbon steel knives, which have harder steel and sharper blades than Western-style knives. Their knives are now celebrated by chefs like Gordon Ramsey, Mark Hix and Argentinian barbecue legend Francis Mallman. Every knife is hand-made with the highest degree of detail and precision in their Peckham-based forgery, where they give back to the local community by sourcing wood from a charitable company that teaches furniture-making skills to disadvantaged youth.
