Join us for a special, limited-edition cook school class led by chef Ranie Saidi, London-based recipe developer and founder of The Malay Cook supper club. His cookbook, The Malay Cook, adapts traditional Malaysian flavours to what is easily available in the UK, without compromising authenticity. His method is based on a practice called agak-agak in Malaysia – where you are encouraged to taste as you go, gaining an instinct for the balance of Malaysian flavours (sweet, sour, salty, spicy, creamy, aromatic, nutty, pungent) rather than following recipes to the letter. In this class, Ranie teaches us the skills and techniques behind Malaysian recipes he learned in his grandmother’s kitchen. You’ll leave with the confidence to cook Malaysian food at home and expand your culinary repertoire. This class includes a Q-and-A with Ranie over dinner, and a glass of wine.
