A great sauce can elevate even the humblest of meals. This technique-driven class will delve deep into the science behind various stocks, emulsions and sauces, with a focus on the 'mother sauces' of French cuisine, such as béchamel, velouté, Hollandaise, and tomato sauce. You will also learn how to make mayonnaise from scratch, as well as chicken or vegetable sauce. All of these will give you a structural understanding of how to build flavour in any dish you cook at home. At the end of the class, you will sit down and enjoy the sauces you've made in the form of roasted vegetables with hollandaise sauce with roasted vegetables; vegetable lasagne with tomato sauce and béchamel; and tarragon and mushroom velouté. You will take home the mayonnaise you've made (and be inspired to swear off the store-bought stuff for life).

Think this class would make a perfect gift? We do too – that's why we offer Cook School Gift Cards, for one or two guests, in paper and digital formats.
