The Mauviel M’Heritage M’150S bain marie, also called a double boiler, is a gorgeous piece for committed bakers and chefs. Made of 1.5mm thick French copper, an impeccable conductor of heat, it has a porcelain insert for tempering chocolate or making delicate sauces like hollandaise, which can become scrambled eggs if a pan gets too hot. (A bain marie—especially a copper one—prevents this.) It also lets you keep ingredients warm until serving. A stainless steel handle stays cool enough to grip while cooking. Suitable for all hobs except induction.

Mauviel M’150 and M’250 pans, with stainless steel, brass, or cast iron handles, are made of pure copper that’s soft by nature. They are polished and finished by hand, resulting in minor abrasions, small black marks or scuffs. These are considered normal and do not have any impact on performance or durability.
