Their M'Passion range is dedicated to copper kitchenware used in baking and pastry-making, for copper is the perfect material for the crystallisation of sugar. Unlined copper pans are beloved by home canners and jam makers around the world for its exceptional heat conductivity. This allows fruit to cook for shorter periods of time, which ensures the flavour, colour, and texture of fruit does not get cooked away. It is very rare for other materials to achieve this. The tapered sides of this generous 36cm pan make stirring easy, and the wide top promotes fast evaporation. Note that pure copper is a reactive material, which means that cooking acidic fruits like tomatoes or strawberries can cause copper to leach into food—unless there is an ample amount of sugar to prevent it from doing so. Thus, fruit and sugar should be mixed together before adding it to the pan, and it should not be used for low- or no-sugar jams. (It’s worth it, trust us! That's why Bon Appétit magazine calls it 'the best thing to happen to homemade jam'.) Suitable for all hobs except induction. It also makes a beautiful ice bucket and display piece when not in use.
