This traditional Turbot Kettle from Mauviel, with a beautiful hammered finish, is made from heavy-gauge, 1.2mm thick copper, giving it superior heat conductivity and temperature control. Lined with non reactive tin, which is excellent for caramelising food. Use the turbot kettle for poaching whole turbot in a court-bouillon, or other flatfish as well as smaller fillets. The diamond shape is derived from the shape of the turbot, and is very striking to present in. The kettle includes a stainless steel rack, making it easy to lift the fish out of the pan without breaking, and features bronze handles on the sides, securely fastened with rivets. Suitable for oven use and on all heat sources except induction.
