Mercer Culinary specialises in making knives that can handle the rigours of a commercial kitchen, at a more affordable price point. This bread knife, from their Genesis range, features wide serrations that effectively latch on to bread—even ones with a very hard crust—and glide through the loaf with minimal tearing, squishing, and crumb loss. The blade is made from strong and resilient German steel, and is ground to a narrower 15° angle for added precision. It is joined to the handle with a well-balanced bolster that separates the handle from the blade. The handle is made of Santoprene® thermoplastic rubber, which makes it comfortable to hold and ensures a non-slip grip, even with damp hands.
Why we love it
'Mercer knives are known for being workhorses, which is why they are often supplied in culinary schools, where students can use (and use and use) them until they gain confidence.'
