It features a 600-grit fine-grained diamond wheel for sharpening, and a higher-grit honing wheel with an integrated polishing agent to remove burrs and polish edges to a razor finish. It has a jig with an adjustable angle setter, so you can set the exact degree in which you want to sharpen your knife (from 8° to 22°). (Western knives tend to be sharpened at 20° while Japanese knives tend to be sharpened at 15°; the original sharpening angle of your knife can be confirmed with the knife's manufacturer.) Operating at a slow 120 RPM, the T-1 guarantees a gentle and controlled process as the knife is guided against the wheel, making it much easier to maintain a consistent angle than freehand sharpening. It removes minimal steel and preserves the life and integrity of your knife blades. Fitted with a UK plug, it is extremely intuitive, requires little pressure, and is ideal for routine maintenance. 

Suitable For: Knives with blades 12–60 millimetres (0.5–2.4 inches) high and up to 5 millimetres (0.2 inches) thick, with unlimited length. To sharpen a taller knife or cleaver, remove the plastic clip from the angle guide. It is not suitable for serrated knives. 

How to Use: Start by setting your desired edge angle and draw each side of your knife across the diamond wheel using light pressure. Continue until you can feel a small burr along the edge. Move to the honing wheel to remove the burr and refine the edge, being careful not hold the knife at too steep an angle. Repeat for the other side of the blade.
