With warmer weather just around the corner why not try a rustic summer Gazpacho? It’s a light and refreshing soup, packed full of flavour and simple to make; it’s a perfect way to start a meal on a hot summer day!

Ingredients

  • 600g of tomatoes
  • 1 large cucumber
  • 2 red peppers
  • 2 green peppers
  • 1 medium size white onion
  • 4 stalks of celery
  • 1/2 cup of olive oil
  • salt and pepper to taste
  • crème fraîche to serve 
 

Method:

  • If using a Vitamix, start on a variable 1 and then increase slowly to variable 5 for around 30-45 seconds
  • Otherwise, use a hand blender to blend the tomatoes first. Then add all the other ingredients and blend until you have reached the desired consistency
  • For the best results, leave to rest in the fridge for a few hours (or, even better, overnight): the flavours improve if left to sit
  • Serve with a swirl of crème fraîche
