Kelly's Carrot and Apple Spiralized Salad

We love this super simple spiraliser salad. The orange juice dressing makes it fresh and summery - the perfect light side dish for a barbecue.


  • 3 large carrots, peeled and julienned with a spiraliser (approx 100g)
  • 2 Granny Smith apples, cored with skin on, julienned with a spiraliser
  • juice of 1 orange
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons chopped fresh Italian parsley
  • 1/4 teaspoon sea salt
  • freshly ground black pepper



  1. Toss the carrots and apples in a salad bowl with the orange juice and olive oil
  2. Sprinkle with parsley, season with the salt and pepper, and toss again
  3. Serve cold
