Kelly's Carrot and Apple Spiralized Salad
We love this super simple spiraliser salad. The orange juice dressing makes it fresh and summery - the perfect light side dish for a barbecue.
Ingredients
- 3 large carrots, peeled and julienned with a spiraliser (approx 100g)
- 2 Granny Smith apples, cored with skin on, julienned with a spiraliser
- juice of 1 orange
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons chopped fresh Italian parsley
- 1/4 teaspoon sea salt
- freshly ground black pepper
Method
- Toss the carrots and apples in a salad bowl with the orange juice and olive oil
- Sprinkle with parsley, season with the salt and pepper, and toss again
- Serve cold
