Dan's Frozen Mango Margarita
Take summer, throw it in a blender, and you have this cocktail. The method for making Dan's frozen mango margarita is as laid back as the ethos of this drink. What we love about it is the use of orange, lime and lemon, giving it a sunshine-bright vibrance. The most important ingredient is a high-speed blender that is tough enough to crush ice without weakening the blades, like a Vitamix. 

Dan's Frozen Mango Margarita

Serves: 2L


Makes 2 litres (8-12 servings, depending on the size of your glasses) 

Ingredients

  • 180ml tequila
  • 120ml Cointreau (or orange liquor of choice)
  • 1 medium orange, peeled
  • 1 lime, peeled
  • 1 lemon, peeled
  • 250g frozen mango
  • 80ml agave syrup, or to taste
  • 2-3 cups of ice, depending on how frozen you like it
  • Equal parts salt and chilli powder, for rim (use less chilli to reduce spice)
  • Extra lime, for rim

Method

  1. Place all ingredients in the Vitamix, in the order of ingredients above: adding liquids, then soft fruits and agave, then ice. Blend on smoothie setting or speed number 10 for 45 to 60 seconds

  2. To make the rim, place equal parts salt and chilli powder on a plate. (We recommend having a bit more salt than chilli at first and tasting some to see if it is to your preference; then adjust accordingly.) Rub the inside of a lime wedge around the rim of each glass, then roll the rim of the glass in the salt-chilli powder mixture

BK Tips

  • Using a smoked chilli powder for the rim adds some extra character
  • For a stronger chilli flavour, use chilli-infused tequila or blend a de-seeded jalapeño along with the other ingredients
  • If you don't have agave syrup, use equal parts honey or 80g sugar
