It’s difficult not to be going back for more with this delicious Roasted Red Pepper Humous. It’s the perfect healthy snack food and more versatile than you think. Serve as a dip with some warm flatbread and a selection of raw seasonal vegetables or try it as a base on pizza instead of tomato. You can mix it into your favourite pasta or add a dollop into soups or salad dressings to give them a flavour punch! It’s always a crowd pleaser and so simple to make.

Ingredients

  • 1 small onion (finely chopped)
  • 1/2 tsp ground coriander
  • 1 tsp ground cumin
  • 1 tsp olive oil
  • 400g chickpeas (drained and rinsed)
  • 3 whole roasted red peppers
  • 1/2 lemon rind and juice
  • salt and pepper to taste
  • pinch of chilli flakes
  • 1/2 garlic clove
  • 1 tbsp pomegranate molasses (optional)
 

Serve with:

Warm flatbreads

Fresh seasonal vegetables


Method:

  1. Heat the oil in a frying pan and add the onions. Cook over a medium heat until soft. Add the spices and cook for a further minute. Leave to cool
  2. Put all the remaining ingredients with the onion mixture into a blender/Vitamix and blend until smooth. You may need to add a bit of water to get the right consistency
  3. Check seasoning and spoon into serving bowl
