Similar to cast iron, carbon steel is known for being indestructible, able to hold sky-high levels of heat that ensure your food sears and browns to perfection. The Mineral B Crêpe Pan strikes a perfect balance: It's easy enough to lift, but heavy-duty enough to reach the high heat that makes carbon steel so special. Pancakes develop beautiful, crisp edges in this pan—not just crêpes, but dosas, injera, spring onion pancakes, and the thousands of foods this pan can be used for, including pizza and bread. The pan is oven-safe and induction-compatible. This pan does not come pre-seasoned; you must season it before use (it's very simple—instructions below).
Care Instructions: Never use soap to clean this pan, and never put it in the dishwasher. To clean, wash the pan with warm water and dry completely before storing. To remove stuck-on bits, make a paste of salt or bicarbonate of soda and water and scrub the pan clean. Always dry completely before storing.
How to Season: Follow these instructions before use, or anytime you want to boost your pan's stick-resistance. Wash your pan with soap and water, and dry completely (skip this step if your pan is not new). Open your windows and ensure the space is ventilated; things will get smoky. Add enough vegetable or other high-burning oil to coat the bottom of the pan, generous pinches of salt, and, if you have it, peels from a potato (these help to pull any remaining impurities). Cook over medium heat, using tongs to occasionally move the peels around the pan and up the sides to the rim, for 8 to 10 minutes. Discard the contents, allow pan to cool, then wipe with paper towels. Your pan is now ready to use. It will develop a stick-resistant 'patina' with more use, and last a lifetime.
