In this practical, skills-focused class, you’ll master three Italian staples that celebrate comfort and versatility. Learn how to bring out the deep, earthy flavour of wild mushrooms in a creamy risotto; knead, roll, and cook pillowy gnocchi served with a nutty brown butter and sage sauce; and transform polenta into golden Roman-style squares topped with cavolo nero. As always, the focus is on techniques – tasting, adjusting, and trusting your senses – so you can adapt these dishes to any season or occasion.

Age Restriction: 18+, or 16+ accompanied by an adult.

Alcohol Policy: A glass of wine, beer, or a soft drink is included with the price of every cook school ticket. Please bring valid ID with you as we operate a 'Challenge 25' policy, where we reserve the right to check ID for any students under or around the age of 25. Any student who arrives to class intoxicated, or appears to be so during class, will be asked to leave and not qualify for a refund.
Cancellation Policy: You must contact us 10 working days before your class to be eligible for a full refund. You can transfer your seat to a different class up to 5 days before your class date. As this is a live ticketed event, we cannot make any exceptions. For our full T&C's, click here.
