Due to their unique spun iron construction, Netherton Foundry pans have all the advantages of cast iron cookware with half the weight. This wok is the thinnest item in the range, which makes it exceptionally heat-responsive—meaning you can achieve that slightly smoky flavour and crisp texture Cantonese chefs call ‘wok hei’. It can withstand the heat of a burner set to high without warping, as long as you make sure to start with low heat and gradually build up to high to avoid thermal shock, which is also caused by adding cold water to a hot, empty pan. The two handles make it easy to lift and carry, and unlike standard carbon steel woks, there’s no need to season before use. A matching lid is available and sold separately here. Like other Netherton Foundry pans, this wok comes pre-seasoned with flax oil and becomes more non-stick over time as long as you maintain it properly. Read our guide to pan seasoning here.

  • Each pan is spun by hand, so each one is slightly different; they will not all be as flat as a billiard table. If you want to keep it as flat as you can, follow these simple guidelines:
  • Heat it SLOWLY to frying temperature, then you can use full power; especially important if you are using powerful cooking hobs such as induction
  • Use a hob ring the same size as the pan base; small rings WILL warp big pans
  •  Never drop a hot pan into cold water, this will buckle it
  •  If you are cooking meat or fish - oil the food, not the pan
  •  Don't fry food straight from the fridge; allow to come up to room temperature
