M'Heritage (M'150S, M'150B, M'200CI, M'200B)
Mauviel's M’Heritage range of copper cookware combines 90% copper with 10% stainless steel for superior heat responsiveness with a durable lining that will never wear down. The M'150 ranges contain 1.5mm thick copper, and the M'200 ranges have 2mm copper.
The benefit of one over the other comes down to the weight of the pans: M'200, due to more copper, is heavier than M'150. Professional chefs tend to choose M'200 pans it for their stronger heat responsiveness and durability, which can withstand heavy restaurant-level use.
Various handle options of cast iron, brass or cast stainless steel give each range an aesthetic option for every cook, but note that stainless steel handles stay comparatively cooler than the others.
Copper pans are not dishwasher-safe. M'Heritage copper cookware is not suitable for induction hobs, but will work on all others including gas, electric, ceramic, halogen and the AGA.
M'6S
M'6S, Mauviel's induction copper range, blends state-of-the-art technology with French culinary tradition. The six-layer construction combines the best features of stainless steel, aluminium and copper to ensure exceptional performance and ease of maintenance. The items in this range feature a drip-free edge and comfortable handles fixed by sturdy rivets. These pans are not dishwasher-safe. They will work on all hobs including induction.
M'Cook
Mauviel's M'Cook range is comprised of five-ply stainless steel pans that have exterior and interior layers of 18/10 stainless steel, around three layers of aluminium that provides fast and uniform heat distribution. Some pieces in the collection feature a non-stick interior. The handles are made from stainless steel, which reinforce the pure and modern design of this range (and stay cool as you cook on the hob). We do not recommend these pans for dishwasher use, as harsh detergents make the edges of these pans feel sharp with time. They are suitable for all hobs including induction. It's a team favourite, which is why we have a large range of pieces in this collection.
M’Stone
The M’Stone collection of non-stick pans is made from food-safe anodised aluminium. Features include induction-compatible bottoms and handles made of stay-cool stainless steel. These pans are not dishwasher-safe. They are suitable for all hobs including induction, and can be used in the oven. Non-stick pan sets are available in this collection, as well as individual pieces like oval fish pans and roasting pans. M'Tradition
Made entirely by hand, pieces in the M'Heritage range have either a hammered or smooth copper finish. They are lined with tin for superior caramelisation, but as tin wears down over time, the lining will need to be re-tinned; this tends to be the case every six years, depending on use. This collection honours Mauviel's centuries-old heritage by recreating pieces in their original forms. They are not induction-compatible or dishwasher safe.
M'Passion
This collection is dedicated to tools for baking cakes and pastries. Here you will find their iconic tin-lined copper Tarte Tatin pans, as well as copper whisking bowls (perfect for whipping egg whites, which copper naturally helps stabilise). They are not induction-compatible or dishwasher safe.
M’Minis
Mauviel's miniature cookware comes in both stainless steel and copper, and in various pan shapes. They can be used for cooking (in the oven, ideally), but are most popular for serving small portions and sauces.

Where is Mauviel cookware made?

Can copper cookware go into the oven?
Yes. Copper pieces are oven safe up to 360°C. However, use caution with pieces having a tin interior (such as those in the M'Tradition collection). Tin will start to blister at 235°C and will subsequently need to be re-tinned.
How do I clean Mauviel copper cookware?
Copper is a soft metal, and therefore requires a little more care. It catches marks easily. Though letting the copper exterior darken with age and use does not harm its performance, and achieves an aesthetic many cooks favour, we recommend polishing copper to preserve its warm glow. The best polish for the job is Mauviel's Copperbrill copper cleaner.
Copper pans are not dishwasher safe, the harsh chemicals will damage the copper and shorten its lifespan. Never use cleaners containing bleach to clean copper cookware, as the corrosive nature of bleach will cause your cookware to pit. Always hand-wash and dry thoroughly, as moisture left on copper for too long might cause a greenish tint (verdigris).
How do I clean Mauviel M’Cook Stainless Steel Cookware?
Though stainless steel M’Cook cookware can be put in the dishwasher, we recommend hand-washing with soap, water and a sponge/scourer to extend the durability of these pans and avoid the steel from wearing down, especially along the edge where it can become 'sharp'.
