This class gives you a practical understanding of how to use a knife correctly—easily the most important kitchen skill there is (and the most misunderstood). Through practice, practice, and more practice, we'll teach you how to correctly and safely handle knives; sharpen and care for knives; make classic French cuts (julienne, brunoise, chiffonade); and more. All this hard work results in a festive meal of roast poussin with homemade gravy; sage and onion stuffing; easy roast potato 'gratin'; braised red cabbage; and all the trimmings.
